Ingredients

For the dough:

  • 3 tablespoons Extra white flour type 400
  • 500 g cleaned and boiled spinach
  • 7 eggs
  • 2 tablespoons grated Parmesan
  • salt and ground black pepper
  • 150 g grated yellow cheese

For the filling:

  • 700 g cottage cheese
  • 7-8 peppers, boiled and diced
  • salt and ground black pepper to taste

PREPARATION

In a deep bowl, break the eggs and whisk well. Add the boiled spinach, flour, grated yellow cheese, parmesan, salt and ground black pepper. Stir well and with the help of a spoon, transfer the mixture to a pan lined with baking paper. Bake in a preheated oven at 180 degrees for about 15-20 minutes. In another deep bowl, combine the cottage cheese, diced peppers, salt and ground black pepper. When the spinach sponge cake has cooled, fill it with the cottage cheese and roll it up. Serve.
