  • 1 onion
  • 1 pepper
  • 1 eggplant
  • 1 tomato
  • 2 tbsp of olive oil
  • 1 glove of garlic
  • 1 tablespoon of mixed dried vegetables  
  • little thyme
  • salt and pepper.

PREPARATION

In a deep bowl, mix the flour with the salt. Add the butter. Mix the ingredients with your hands until you get a dough in crumbs. Add the cold water and stir constantly until you get a shaped ball of dough. Cover the prepared dough with foil and leave it in the refrigerator for 1 hour. The filling: Chop the zucchini, onion, pepper and the eggplant and fry. Finally add the garlic and spices. Divide the previously prepared dough into 4 parts. Stretch each part with a thikness of 1 cm. In the middle of each crust, apply the filling, and fold the ends inwards. Top it with the chopped tomato. Put the prepared mini pies in the refrigerator for 20 minutes. Then bake them in preheated oven at 190°C, for about 25 minutes.
