Ingredients

  • 230 g Ekstra white flour type 400
  • 150 g sugar
  • 120 ml oil
  • 2 eggs
  • zest of 1 lemon
  • a few drops of almond extract
  • 100 g whole almonds
  • 100 g raisins
  • 2 teaspoons baking powder
  • little salt
  • 1 whipped egg for coating

PREPARATION

Heat the oven at 160° C. In a large, deep bowl, whisk together the eggs, sugar, cooking oil, lemon zest and almond extract. Then add the whole almonds and raisins. In another bowl, mix the flour, salt and baking powder. Add the dry ingridients in the egg mixture and mix well to get a homogeneous mixture. Divide the dough into 2 parts in long loaves. Coat with egg and bake in a preheated oven at 160° C for about 30 minutes. Once baked, cut the loaves into equal pieces 1 cm thick. Lay the biscuits again on a baking sheet in order to bake the inside. Bake for another 20 minutes or until golden brown.
