CHOCOLATE SOUFFLÉ

Ingredients

  • 2 tablespoons Extra white flour type 400
  • 1 tablespoon butter
  • 4 tablespoons sugar
  • 1 yolk
  • 100 g cooking chocolate with at least 60% cocoa
  • 3 tablespoon butter
  • 1 tablespoon vanilla extract
  • pinch of salt
  • 2 egg whites
  • 50 g sugar
  • 1/2 teaspoon alcoholic vinegar

PREPARATION

Grease two ceramic soufflé moulds with butter and put 2 tablespoons sugar in each one to prevent butter and the soufflé from sticking. In a deep bowl put the chocolate and butter to melt in steam. Stir, cool and add 1 egg yolk and vanilla extract. Add the flour and a pinch of salt. Stir well. Set this mixture aside. In a deep bowl, whisk the egg whites together with the sugar and alcohol vinegar into a solid whipped cream. Gradually mix the mixture with the whipped whites into the chocolate mixture so that you get an airy mixture for soufflé. Fill the ceramic pots completely to the top. Shake them off the work surface to let the air out and use a spatula to level the entire top of the ceramic bowl. Use your thumb to make a groove across the entire surface to the very edge of the ceramic bowl, 1/2 cm deep. Bake in a preheated oven for only 13-14 minutes at 200 degrees.Serve immediately!
