First preheat the oven to 180 degrees. In a deep bowl, mix together the dry ingredients: flour, ground ginger, cinnamon, sugar, nutmeg, cloves, baking powder, salt and baking soda. Add the cold butter to this mixture and mix with a mixer until you get a mixture in the form of sand. Add the eggs one by one, whisking between each addition. Add milk, orange juice, vanilla extract and orange peel and finally the chopped candied fruit. Mix the mixture with a mixer until combined, then with the help of a spatula, distribute the mixture in three round pans with a mechanism or bake one crust one by one, so that the mixture will be distributed in three equal parts. Bake each crust for about 20-25 minutes. Allow to cool completely. To prepare the filling: in a deep bowl, whisk together the cream cheese, powdered sugar, cinnamon and sweet cream until you get a thick mixture. Coat the cake on each crust and on top from all sides, leave to harden for about 2 hours in the refrigerator and decorate with cookies or the remaining filling.
