TRIANGLES WITH CRANBERRY AND ORANGE

Ingredients

  • 250 g Cake flour
  • 1 teaspoon salt
  • 2 tablespoons orange peel
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 teaspoon dry ginger
  • 1 teaspoon vanilla extract
  • 200 g sugar
  • 250 g melted butter
  • 200 g cranberry
  • 150 g white chocolate cut into cubes

For coating:

  • 200 g neutral cream-cheese (or neutral milk spread)
  • 200 g powdered sugar
  • peel from one orange
  • 1 teaspoon of vanilla
  • 70 g dry cranberry

PREPARATION

In a deep bowl mix together the dry ingredients (flour, salt, cinnamon, orange peel, dried ginger and sugar). Add the wet ingredients mixed in another bowl: eggs, vanilla extract and melted butter. Combine the two mixtures well and add the dry cranberries and finely chopped white chocolate for cooking. Pour the mixture into a baking tray lined with parchment paper and bake for about 20 minutes in a preheated oven at 180 degrees. Allow to cool completely, and in the meantime prepare the filling. In a bowl on the side, whisk together the whipped cream cheese and powdered sugar. Add the lemon zest, eggs and vanilla extract. Stir and coat the cooled cake. Finally, before cutting into pieces, sprinkle with dried cranberries.
